Brown Ginger Delight

which is delicious gluten-free and lactose-free gingerbread :D 



Ingredients:
  • 113 g lakctosefree margarine
  • 100 g Muscovado sugar
  • 200 ml of molasses (I used honey, worked as well)
  • 1 eggfree
  • 1 teaspoon vanilla extract
  • 100 g peanut flour
  • 150 g Shar mix C flour (gluten-free)
  • 1,5 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cloves (full cloves)
  • 1 tablespoon of cocoa
  • 3 pcs of cardamon (full pieces)
  • 3/4 teaspoon of salt
  • 235 ml of boiling water
Instructions:
  • Preheat oven to 175 C, and prepare baking pan with baking paper.
  • Combine room temperature margarine with Muscovado sugar in the large bowl, make it creamy.
  • Add molasses (or honey) and stir it well.
  • Add egg-free, Vanilla, stir it well.
  • Preheat pan and warm up spices, best if you have them not grounded, warm it up, and then blend it in the blender until you get powder.
  • In separate bowl combine dry ingredients: flours, baking soda, spices mix and salt.
  • Gradually add dry mix into the wet ingredients. Stir it well.
  • Gradually and carefully add boiling water, until all ingredients are smooth and well-combined.
  • Pour dough into the baking pan and bake for 40 min, or until the tooth stick is dry when insert.
